Easy Cheesy Biscuits

Strange to start with a savoury biscuit I know but I just happen to fancy these today.  These are easy peasy to make as the ingredients are measured in equal quantities. I could eat the whole batch in one go they are so addictive and melt in the mouth. Top with cream cheese and chives if you wish or a little paprika sprinkled on before baking is divine. They also freeze really well so are great for kids luchboxes. Freeze in fours and just take them out and pop in the lunch box in the morning – they’ll be defrosted by lunch time.

 

Makes approx 32 depending on size. Pre heat oven to gas mark 6 or 200c

6oz Plain flour

6oz butter

6oz grated mature good quality cheese

 

Preheat the oven and grease 2 large baking trays. This is a one bowl dough so just throw all the ingredients in together and rub in the butter into the flour and cheese. You could do this in a mixer but I think it just adds to the washing up and doing it by hand only teas a couple of minutes.  Combine into a smooth dough with your hands and roll out to approx 5mm thick. I’ve used a 7cm crinkled cutter but use one of your choice – a shaped one for Christmas would be nice. Bake for approx 12 minutes in the middle of the oven until golden brown. Turn the tray round half way through to give an even bake.
